Special Taste Fish Gruel

It is a folk food of Muju county. In old days, many people used to enjoy appeasing their hungers when they were tired after enjoying the leisure time by cooking some freshwater fish, which were just caught from a stream, in a cauldron over a log fire by a stream. While some small groups of people ate the fish soup, used to boil down it again by pouring some water to increase the portions if they had felt not enough.

It is cooked by well boiling down some gutted and boned freshwater flatfish ('Jagami'), which are caught from a clear and clean brook, after putting all kinds of seasonings, such as some glutinous rice, hot pepper paste, scallions, garlics, onions, sesame and ginseng, etc., which are collected from the mountains and fields of Muju, and pouring some water into the cauldron until it becomes some soup. Especially, it is a kind of healthy high-protein soup, which even females and children like to eat since the pieces of flatfish are not fishy because they live in very clean water. 'Jagami', which is considered as the best raw materials for 'Eojuk' (fish soup), is a Muju county dialect word of 'Jagasari'.
